What is Bang Bang shrimp?

Crispy shrimp mixed with creamy, mildly sweet and spicy sauce. It’s a popular shrimp recipe in restaurants.
To make the bang bang shrimp, the cleaned and peeled shrimp is first soaked in buttermilk and then coated in a thick layer of cornflour.
You can also use panko crumbs as a coat for a crispier finish but for this recipe, we will be using cornflour.
The shrimp is then deep-fried to give it a crunch.
Once the shrimp are fried they are then coated in a ridiculously easy and creamy sauce which is what gives the shrimp dish its lip-smacking taste.

  • If you must, you can make the bang bang shrimp recipe 4-5 hours early but you might find the shrimp are less crispy.
  • If you are going to make it ahead, make the sauce and refrigerate. coat the shrimp with cornstarch, cling wrap and refrigerate as well.
  • 30 minutes to serving time, toss the shrimp in cornstarch again and fry then toss with the creamy sauce.

Ingredients for Bang Bang sauce shrimp recipe.

Medium-sized peeled and deveined shrimp.

To make buttermilk.

Fresh milk
lime or white vinegar
Cornstarch seasoned with salt
Garlic powder(optional to season cornstarch).

To make the Bang Bang shrimp.

Mayonnaise
Sriracha sauce(substitute with a hot sauce if you are unable to find sriracha and don’t mind deviating from the original recipe).
Sweet Thai sauce(replace with a sweet chilli sauce if you are not able to find the Thai sweet sauce).
Honey
Oil

How to make Bang Bang shrimp recipe.

If you are using fresh shrimp, clean, devein, and wash the shrimp.
Drain any excess water and pat dry with some paper towels.

How to batter coat and deep fry shrimp.

Add lime or white vinegar to a bowl of milk.
Stir for a few seconds, cover and let it rest for 5 minutes.
You will notice the milk turning thick this is your buttermilk.
While the buttermilk is made, add the cornstarch, salt to season and garlic powder(optional)to a platter.

Add the shrimp to the buttermilk and soak them for 10 minutes.

Hold the shrimp from its tail and shake to remove any excess buttermilk.
Immediately transfer it to the platter of cornstarch and completely coat the shrimps.

Once you’ve coated all the shrimp in cornstarch transfer them to a plate.
Place deep frying over the stovetop, and pour in the oil.
Bring the oil to medium heat where you can gently fry the shrimp in small batches.
Fry the shrimp until golden brown, the oil might turn frothy due to extra cornstarch but continue to fry the shrimp.

Place the fried shrimp on a plate covered with kitchen paper to remove excess oil.

How to make Bang Bang sauce.

In a small bowl, combine Mayonnaise(1/2 a cup), sriracha sauce(1/4 cup), sweet Thai sauce(1/4 cup), and honey(1 tbsp).
Combine all the ingredients, taste and check the bang bang sauce taste is balanced and set aside.

Transfer the fried shrimp onto a serving bowl and drizzle the bang bang sauce.
Toss the fried shrimp and sauce together.
Serve immediately.
